Raw materials for molasses production can come from two types of agricultural products: sugar cane and sugar beets. However, based on climatic conditions and farming characteristics, molasses in our country is made from sugarcane.
Sugar molasses is liquid, slightly viscous and dark brown in color. However, the consistency and darkness of molasses will depend on many factors. Pure molasses will be almost a homogeneous solution and is soluble in water.
Chemical composition and nutrition of molasses
- Sugar : Soluble carbohydrates are the main nutritional components of molasses, of which sucrose is the main ingredient. The total sugar content in beet molasses is usually lower than that in sugarcane molasses, but contains almost all sucrose.
- Sugar-free organic ingredients: The non-sugar organic substances of molasses determine many of its physical properties, especially its viscosity. It consists mainly of carbohydrates such as starch, N-containing compounds and organic acids.
